This is moghrabieh, the Lebanon version of couscous. Moghrabieh (which means “a meal from the Maghreb”) is a popular traditional Lebanese dish that is served as a festive dinner to which many families or guests are invited. Moghrabieh keeps nicely in the fridge and may be reheated in the oven for many days after without losing taste. You can use it to enhance the flavour of your favourite dishes without overpowering the taste of the components.
