At Pastificio del Colle, pasta is crafted with traditional, artisanal methods, using only premium durum wheat semolina. The dough is either hand-kneaded or pressed through bronze dies that give the pasta a rough texture, ideal for holding sauces. Depending on the shape, natural coloured powders are added for variety.
After shaping, either by bronze dies or a delicate hand-molding process for multicoloured pasta, the pasta undergoes slow drying at a low temperature of around 38°C. This gentle method preserves the flavour and nutritional qualities of the semolina. Once dried to a humidity level of 12.5%, the pasta stabilizes and is then packaged—hand-packed for artisanal shapes and machine-packed for the rest, always bearing the Pastificio del Colle seal.
Cooking time : approximately 7 to 10 min.
Store in a cool, dry place.
